Ingredients:
1 small can crushed pineapple
1/2 cup sugar
1 envelope gelatin
1/2 cup cold water
1 (8 oz.) package softened cream cheese
1/2 pint whipping cream
1/2 cup chopped pecans
1 small bottle red cherries, drained and halved
Directions:
Step 1:
Drain juice from pineapple. Add to juice 1/2 cup sugar and let boil until syrupy (just a few minutes).
Step 2:
Dissolve gelatin in 1/2 cup cold water and add to warm syrup, stirring until completely dissolved.
Step 3:
Mash cream cheese and add to pineapple.
Step 4:
When syrup is cooled, add cream cheese, pineapple, whipped cream, pecans, and cherries.
Step 5:
Place in mold and chill.
Note: This can also be a very delicious dessert, and can be placed in individual molds as well as one large mold. Very festive but can be made any time of the year.
