Ingredients:
2 sticks butter
2 medium onions, chopped
3/4 cup bell pepper, chopped
1 tsp. garlic, minced
1 stalk celery, chopped
1/4 cup flour
1 bunch green onions, chopped
3 lbs. chicken or 2 lbs. shrimp or crawfish
1 lb. Velveeta cheese
1 pint Half & Half or 1 can evaporated milk
1 can Rotel with juice
1 lb. Fettuccine pasta - cooked
Directions:
Step 1:
Saute seasonings (onions, bell pepper, celery, garlic) till clear.
Step 2:
Add Rotel with juice.
Step 3:
Add flour slowly and stir often to blend well.
Step 4:
Add meat and cook about 20 - 25 minutes (seafood only cook 10 - 15 minutes) or until done.
Step 5:
Cut cheese in chunks and add to mixture.
Step 6:
Cook slowly - after all cheese is melted, mix Half & Half and cook about 10 minutes.
Step 7:
Add pasta and put into buttered casserole dish.
Step 8:
Bake at 350 degrees for 30 minutes.
