Crabmeat Au Gratin Recipe

Ingredients:
1 cup onion, chopped fine
1 stalk celery, chopped fine
1 cup butter
1/2 cup flour
13 oz. can evaporated milk
2 egg yolks, beaten
1 tsp. salt or to taste
1/2 tsp. red pepper or to taste
1/4 tsp. black pepper or to taste
1 lb. white crabmeat
1/2 lb. grated American cheese or to liking

Directions:

Step 1:
Saute onions and celery in butter until wilted. Blend in flour.

Step 2:
Gradually pour in milk, stirring constantly. Add more milk if needed.

Step 3:
Add egg yolks, salt, and peppers.

Step 4:
Cook for 5 minutes.

Step 5:
Place crabmeat in separate bowl. Pour cooked sauce over crabmeat.

Step 6:
GENTLY blend well, then transfer into a LIGHTLY greased casserole.

Step 7:
Sprinkle with grated American cheese.

Step 8:
Bake at 375 degrees for 10 - 15 minutes until lightly browned.
