Carrot Cake Recipe

Cake Dry Ingredients:
2 cups flour
2 cups sugar
2 tsp. soda
2 tsp. cream of tartar
1 tsp. salt
3 tsp. cinnamon

Cake Wet Ingredients:
1 1/2 cup oil
4 large eggs, well beaten
3 cups grated carrots

Directions:

Step 1:
Mix all dry ingredients together in a large bowl.

Step 2:
Add wet ingredients and mix well. Place in 9x13 greased pan.

Step 3:
Bake in preheated 350 degree oven for 40 - 50 minutes or until toothpick comes out clean.

Step 4:
Cool cake COMPLETELY before icing.

Icing Ingredients:
1 stick butter, room temperature
8 oz. cream cheese, room temperature
1 pkg. powdered sugar, sifted to remove any lumps
1 tsp. vanilla
1 cup pecans, chopped

Directions:

Step 1:
Cream butter and cream cheese together.

Step 2:
Add powdered sugar a little at a time and blend well.

Step 3:
Add vanilla and pecans and stir well.

Step 4:
Ice cooled cake and enjoy.
