Blueberry Streusel Cobbler Recipe

Ingredients:
1 pint blueberries
1 (14 oz) can sweetened condensed milk
2 tsp. grated lemon rind
14 Tbls. cold butter
2 cups biscuit baking mix
1/2 cup firmly packed brown sugar
1/2 cup chopped pecans
Blueberry Sauce (see recipe below)

Directions:

Step 1:
In bowl, combine berries, sweetened condensed milk and rind.

Step 2:
In large bowl, cut 12 Tbls. butter into 1 1/2 cups biscuit mix until crumbly, add berry mixture.

Step 3:
Spread in greased 9 inch square pan.

Step 4:
In bowl, mix 1/2 cup biscuit mix, sugar and 2 Tbls. butter until crumbly; add pecans. Sprinkle over top.

Step 5:
Bake at 325 degrees for 70 minutes or until golden.

Step 6:
Serve warm with ice cream and Blueberry Sauce.

Blueberry Sauce:
1/2 cup sugar
1 Tbls. cornstarch
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/2 cup water
1 pint blueberries

Directions:

Step 1:
In saucepan, combine sugar, cornstarch, cinnamon, nutmeg and water.

Step 2:
Cook over medium heat and stir until thick.

Step 3:
Stir in blueberries and continue until hot.

Note: Cobbler can be divided into portions and frozen; thawed and reheated when ready to serve.
