Almond Coconut Pound Cake Recipe

Ingredients:
2 sticks butter, softened
1/2 cup shortening
3 cups sugar
5 eggs
1 tsp. coconut extract
1 tsp. almond extract
3 cups flour
1/2 tsp. baking powder
1/2 tsp. salt
1 cup milk

Directions:

Step 1:
Reserve eggs, butter and shortening allowing these ingredients to reach room temperature.

Step 2:
Cream the butter, shortening and sugar until light and fluffy.

Step 3:
Add the eggs, one at a time, beating for 1 minute after each egg.

Step 4:
Add coconut and almond extract.

Step 5:
Alternately add flour and milk, beginning with flour and ending with flour.

Step 6:
Grease and flour bundt pan or 9x13x2 pan and bake in 325 degree oven for 1 hour or until toothpick comes out clean.

Note: You can also bake in small individual pans to give as Christmas gifts. Freezes very well if wrapped carefully. Remove cakes from pans, then wrap first in plastic wrap, and then in foil.
